A Simple Fall Recipe – Apple Crisp
This simple fruit crisp recipe is one of my favorites when apples are in season and the temperatures get low enough to turn on the oven and do some fall baking! I received this simple recipe from my mother-in-law, Mildred Ashley. She was an excellent cook and knew how to stretch a dollar to go far in her grocery budget. Her title for this recipe was “Apple Brown Betty”, which is how it is written on my recipe card. She only used apples when she made this. I have tried a variety of fruit combinations while following the same instructions and have found this recipe to still work well.
Mom Ashley was a very health-conscious cook and used sugar only when necessary, usually only brown sugar. For a slightly sweeter taste, I generally mix in a small amount of white sugar with the fruit. This added sugar also creates a nice syrup during baking.
Recipe: Apple Crisp
INGREDIENTS
½ cup oatmeal
¼ cup all-purpose flour
¾ cup brown sugar
4 Tbsp. butter
A dash of cinnamon
INSTRUCTIONS
- Fill a buttered casserole dish* about ¾ full with apple chunks or slices. Add about 1 Tbsp. water.
- Make the crumb topping
- Mix the topping ingredients together in a food processor until the butter is mixed in well. Spread the topping over the fruit.
- Bake in a 350-degree oven for 35-45 minutes. Allow to cool. Can serve while still slightly warm, topped with a dollop of whipped cream or a scoop of ice cream.
*An 8x8 square dish works well for this. I often double the crumb topping for a pan this size. The extra topping holds up well with the amount of fruit syrup created during baking.
