Fresh homemade strawberry pie
My family has picked fresh strawberries locally for many years, even taking our children with us when they were young.
And I have been making this strawberry pie recipe since my sister-in-law first shared it with me in 1988. It has been an annual favorite ever since! This simple recipe doesn’t even require a traditional pastry crust - what's not to love about that!
You can make this pie in 3 easy steps!
Recipe: Homemade Strawberry Pie
Step 1: Make the pie crust
INGREDIENTS
1 1/2 cups flour
1 tsp. salt
1 1/2 Tbsp. sugar
1/2 cup vegetable oil
2 Tbsp. milk
INSTRUCTIONS
Mix these ingredients together in a 9-inch pie plate, using a fork. Press the mixture out to the edges with your fingertips, forming a crust. Prick the crust with a fork. Bake 15-18 minutes at 425 degrees. Allow to cool.
Step 2: Make the strawberry filling
INGREDIENTS
1 cup water
1 cup sugar
3 Tbsp. cornstarch
2 Tbsp. light corn syrup
INSTRUCTIONS
Stir these together in a saucepan until boiling, then continue to stir until thick and clear. Add: 2 Tbsp. strawberry (or raspberry*) gelatin
Stir until well-blended. Allow to cool. Then stir 1 quart fresh halved or sliced strawberries into the cooled filling.
Step 3: Assemble the pie
INSTRUCTIONS
Pour this mixture into the pie crust and refrigerate. Top with whipped topping and additional slices strawberries when serving, if desired.
*I use raspberry gelatin because I find the slightly tart flavor doesn't compete with the strawberry flavor. It seems to enhance the flavor of the berries.
