This quick bread comes together easily, with its streusel topping accenting the subtle swirled cinnamon flavor.
Buttermilk Cinnamon Bread
INGREDIENTS
- 2 cups all-purpose flour
- 1 tsp. baking soda
- ½ tsp. salt
- ¼ cup vegetable oil
- 1 ¼ cup sugar, divided
- I cup buttermilk
- 1 egg
- ½ tsp ground cinnamon
Directions
In a large mixing bowl, combine flour, baking soda, and salt. In a small bowl, combine oil and ¾ cup sugar, then add buttermilk and egg; stir to combine. Stir this into the dry ingredients until moistened.
In a small dish, combine cinnamon and remaining sugar. Set aside.
Grease a standard size bread loaf pan. Fill loaf pan 1/3 full with batter. Sprinkle half of cinnamon mixture over the batter. Top with remaining batter, then top with remaining cinnamon mixture. Swirl batter with a knife to slightly mix cinnamon mixture into batter.
Bake at 350 degrees for 45-55 minutes. Cool in pan for 10 minutes before removing to a wire rack.
