
Simple Make-ahead Bran Muffins
During these last weeks of winter here in Ohio, I find myself ready for some simple recipes and easy cooking to carry me through until picnic weather and grilling season returns. My winter menu has become a bit monotonous, so I’m pulling out a few make-ahead recipes for more variety and less time in the kitchen!
One of my favorite make-ahead recipes came from a friend who was an expert at cooking large quantities of delicious food for church dinners. Her recipe for bran muffins is a tried-and-true favorite for me because of its exceptional taste and texture, as well as its simple instructions. These bran muffins also freeze well, so you can take out a few muffins at a time and the flavor will still be outstanding. I hope you will give these a try!
Recipe: Make-ahead Bran Muffins
INGREDIENTS
5 cups flour
3 cups sugar
5 tsp. baking soda
1 (10-12 oz. box) of bran flakes cereal with raisins
Mix these dry ingredients together in a large bowl. Then add:
- 4 beaten eggs
- 1 cup oil
- 1 quart buttermilk
Combine all ingredients thoroughly in a large bowl. Cover and allow to set overnight in the refrigerator (this can be stored in the refrigerator for up to a week). To bake muffins, preheat oven to 400 degrees. Remove batter from refrigerator, but do not mix the batter! Scoop muffin batter into regular size muffin tin cups sprayed with non-stick cooking spray. Do not overfill the muffin cups. Bake for 15 minutes. Allow to cool for a few minutes in pans. Remove to cooling rack. Makes 4-5 dozen.
These simple bran muffins are perfect for a brunch, a bridal shower, or a family gathering. Or enjoy one with your coffee in the morning!
